Keto Friendly : Italian Antipasto Salad

 

This fabulous keto friendly Italian antipasto salad makes a great lunch, appetizer, or even a light snack after a workout. A delicious addition to you menu this Italian antipasto salad is not only keto friendly but easy to make too.

 

Ingredients:

½ cup Kalamata Olives

1 cup Cherry Tomatoes (halved)

½ cup Bocconcini Cheese Balls

½ cup Salami (quartered)

1 cup Fresh Basil

2 tsp. Honey

1 tsp. Lemon Juice

3 tsp. Extra Virgin Olive Oil

1 clove Minced Garlic

 

Directions:

In a medium sized bowl add cherry tomatoes, olives, and bocconcini cheese.

Cut salami into quartered slices and add to bowl.

Roughly chop fresh basil and add to bowl with salami, tomatoes, olives and bocconcini cheese.

Combine honey, lemon juice, olive oil, and minced garlic in a small bowl.

Incorporate dressing with main ingredients.

Chill, serve and enjoy!
